Muffins with Oscar® Gold Kiwis

Ingredients

  • 4 Oscar® Gold Kiwis
  • 250 g flour
  • 160 g powdered sugar
  • 2 tsp baking powder
  • 150 ml milk
  • 2 eggs
  • 1 pinch of salt
  • 60 ml coconut oil (or neutral oil)
  • Sugar
  • Topping:
  • 1 Oscar® Gold Kiwi
  • 1 sweetened plain yogurt (or vanilla yogurt)

Recipe

Peel the kiwis and cut them into pieces.

In a bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.

In another bowl, whisk the eggs with milk and oil. Add the dry ingredients to the wet ingredients and mix quickly without overworking the batter to help the muffins rise.

Fold in the kiwi pieces, reserving a few for topping. Mix gently.

Divide the batter into muffin molds and sprinkle a little sugar on top.
Bake at 180°C for 25 minutes.

Let cool.

Before serving, add a spoonful of yogurt on each muffin and top with a few pieces of Oscar® Gold Kiwi.
