Oscar kiwifruit soup with crumble

Ingredients

  • 10 Oscar green kiwis (+ 4 kiwis for the topping)
  • 75g flour
  • 40g butter at room temperature
  • 50g brown sugar
  • Juice of one lime
  • 2 tbsp runny honey
  • 4 tbsp crushed pistachios
  • 1 Handful of fresh mint leaves.

Recipe

Preheat oven to 180 C/fan.

Place the flour, butter and sugar in a bowl. Combine with your fingertips until the mixture resembles coarse crumbs.

Put the preparation on a baking tray and place in the oven for 12 minutes. Allow to cool and reserve.

Peel the kiwifruit, cut them in half and place them in a bowl.

Add the lime juice and blend using an electric hand blender.

Sieve to remove the seeds and retain only the flesh.

Transfer the soup into soup bowls.

Add the slices of kiwi and sprinkle with the crumble and pistachios.

Drizzle with honey and garnish with a few mint leaves. © Poire & Cactus
